Food Pairing An excellent aperitif that is also outstanding with fish, seafood and certain white meats. A classic pairing with any type of goat cheese. Tasting notes Remarkably aromatic with pretty white flower and fruit fragrances. On the palate it reveals a freshness that is pure and clean. Notes of citrus, apple and gooseberry with hints of passion fruit are found in this lively and bright wine. An incredible value. Vineyard The soils are composed of clay and limestone. The vineyards are located on slopes and hills separating the historic village of Chavignol and the town of Sancerre. (65% clay and 35% limestone). Vinification This wine is fermented in temperature controlled stainless steel tanks; it is then aged for 5 months on its lees which adds complexity to this aromatic Sauvignon Blanc. Appellation Sancerre is a small wine district in central France’s Loire Valley famous for its crisp, aromatic white wines made from the Sauvignon Blanc grape. For most of its history it was associated with red wine production. It wasn’t until the 1970’s with the increased popularity of white wines in Parisian bistros that Sancerre became synonymous with Sauvignon Blanc. The region has a cool continental climate, so the grapes have high acidity and crisp flavors. It is generally fermented and aged in stainless steel tanks without any oak influence. Enjoy Sancerre chilled and when it’s young and fresh.
